Troy Welch was raised in Ashland and started his meat cutting career at Rivertown back in 1998. He worked for Rivertown for 5 years and then began working at Brookshires. He left the meat industry for a few years and worked as a forestry technician with Roy O Martin. In the winter of 2014, he decided to mention to his wife that he wanted to process some deer in the upcoming season for extra money. After that first season at their house and with the help of two friends Justin and Wade, the Provencal store had its first deer season in October of 2015.
With his fresh meat background, Troy decided he could provide quality meat with affordable prices in the off season. By the good Lord’s grace, he said they were able to open their second location in Many, LA in February of 2023.
Troy says he absolutely loves what he is blessed to be able to wake up and do every day. He says he is thankful for every single customer who has shopped with them since 2015 and those who allow them to process their deer year after year.
He stated that without every single customer and employee this wouldn’t be possible and wants to say thank you to you all!
